Stray from the typical caesar salad and toss toasted leftover bagels with vegetables and basil for a fun new salad recipe!

  • 10 shredded basil leaves
  • 2 tomatoes
  • 2 tablespoons red wine vinegar
  • ½ cup olive oil
  • 4 cubed bagels
  • ¾ cup cubed cucumbers
  • 2 cups halved cherry tomatoes
  • 1 cup black olives
  • ½ cup sliced red onion

Toast the cubed bagels on a baking sheet for 6 minutes at 400 degrees F. Cut the tomatoes julienne and toss the bagel pieces, cucumbers, olive oil, vinegar, onions, tomatoes, basil, cherry tomatoes, and olives in a large bowl. Divide the salad into 4 bowls and serve.
