Breaded Oven Baked Zucchini Fries

- 3 zucchini
- 1 1/4 C. whole wheat bread crumbs
- 1 clove garlic, minced fine
- 1/4 C. fresh basil leaves
- 2 Tbs. oil
- 1 whole egg
- 1 egg white
- sea salt
Preheat the oven to 425 degrees. Cut each zucchini in half lengthwise and then each half into thirds so that you have six fries from each zucchini. Lightly salt the fries and set aside.
In a medium bowl, beat the whole egg and egg white together. In a food processor, pulse the garlic, 2 Tbs. oil, and the basil until it is coarsely chopped. Add in the bread crumbs and continue to pulse until the mixture is well combined. Add a generous pinch of salt and pulse to distribute. Taste and add salt to taste. Put the crumb mixture into a bowl.
Dredge each zucchini piece in the egg mixture and then into the bread crumbs mixture. Press gently to encourage the crumbs to stick to the zucchini. Line the breaded zucchini fries on a baking sheet and bake in the oven for 20 to 30 minutes, or until the bread crumbs are browned and the zucchini is soft. If the breadcrumbs look like they are drying out, brush them with extra oil.
