Ingredients
- 2 whole chicken breasts, skinned, boned, halved, and flattened
- 1/2 C. flavored bread crumbs
- 1/2 C. pesto
- 4 slices provolone cheese
- sprig of parsley, chopped
- 2 tsp. olive oil
Directions
In a flat dish, press bread crumbs into chicken on all sides. Oil an oven-proof casserole dish. Lay chicken in an oiled casserole dish. Spoon pesto on chicken. Top with provolone cheese and chopped parsley. Bake in a preheated 400-degree oven for 20 minutes.
