  • 1 tablespoon butter
  • ¾ cup shredded cheddar cheese
  • 4 flour tortillas
  • 6 eggs
  • 2 ounces of crumbled pork sausage

First beat the eggs in a small bowl. Then heat the butter in a skillet over medium heat. Stir in the eggs and sausage and continue to stir often until the eggs are set. Store the cooked eggs and meat in the refrigerator. When you’re ready to eat, divide the egg and sausage equally between the four tortillas and sprinkle the shredded cheese on top of each. Microwave for a few minutes and roll up the tortilla.
