Breakfast Casserole Supreme
Serving Size / Yield
- 1 lb. sausage (1/2 lb. hot and 1/2 lb. mild)
- 8 eggs
- 1-lb. bag hash browns, shredded
- 1 C. American cheese, grated
- 1 C. cream of chicken soup
- cooking spray
- 1/2 C. milk
Preheat oven to 350 degrees. Hard boil 4 of the 8 eggs and slice. Mix, brown and drain sausage. Make soup using milk. In a medium mixing bowl, mix soup, sausage and 1/2 of the bag of hash browns. Add the other 4 eggs and cheese to the mixture. Mix well.
Spray casserole dish with cooking spray. Cover bottom of casserole dish with about 2 hand fulls of hash browns. Layer boiled eggs over hash browns. Pour mixture over eggs and layer top with another 2 hand fulls of hash browns. Bake for 40 minutes. If you want hash browns to get brown, turn oven to broil and leave casserole in for an additional 10 minutes.
