  • 1 (5 oz.) bag baby spinach, chopped
  • 4 eggs
  • 4 egg whites
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 C. shredded Cheddar cheese
  • 1 avocado, sliced
  • 4 flour tortillas
  • hot sauce

Take out a nonstick skillet and spray it with cooking spray over medium-high heat. Place the spinach into the skillet and cook and stir regularly for two minutes, which is around how long it should take for the spinach to wilt. Take out a small bowl and whisk together the eggs and egg whites. Add the egg mixture into the skillet and cook and stir for four minutes, or until cooked through. Season with salt and pepper to your preference. Take out the tortillas and transfer 1/4 of the egg mixture into the center of each wrap. Sprinkle two T. cheese onto each wrap. Top with avocado slices and then fold into a sandwich wrap. Serve alongside hot sauce.
