Breakfast Eggs and Potatoes

This is sort of a breakfast bake or casserole, except there isn't any soup.

  • 2 med. boiled potatoes, sliced
  • 4 slices mozzarella cheese
  • 4 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 Tbs. parmesan cheese
  • 1 Tbs. butter

Put sliced potatoes in a greased baking dish. Put mozzarella slices over them and break eggs gently over mozzarella. Sprinkle with salt, pepper and parmesan cheese. Dot with butter and bake in oven for 20 minutes.
