  • 1 lb of potatoes
  • 2 tbsp of herbs
  • 1 tsp of salt
  • 1 tsp of pepper
  • 2 tbsp of olive oil
  • 2 eggs, beaten

Cut potatoes into quarters and split half of the potatoes into microwave safe bowls. Microwave each bowl for about 2-3 minutes each. Potatoes should be soft enough to cut with ease. Cut potatoes into bite-size chunks. Heat olive oil on a large skillet. Transfer potatoes to the skillet, and cook for 5 minutes. Add eggs, season with herbs, and cook until golden brown. Serve.
