This is a complete breakfast that includes onions, kale, sausage and egg. The best part is that it is in a cup and super easy to make!

  • ½ a cup of chopped kale
  • ½ a cup of chopped green onions
  • 4 large eggs
  • ½ a cup of chopped sausage
  • salt and pepper to taste

Preheat oven to 350 degrees and spray a nonstick muffin tin with nonstick cooking spray.
In a bowl, add the eggs and whisk them.
Next, take about 1 teaspoon from each of the item and put them into each tin and add the egg on top of the ingredients making sure to leave 1/4" from the top of the tray.
Bake the eggs for 20 minutes, or until a toothpick comes out clean from each cup.
Remove from the oven and then serve!
