Leftover pizza is good. But a fresh batch of mini pizzas is even better. With this recipe, it'll only take you 10 minutes to make a delicious breakfast meal.

  • 1 Large egg, beaten
  • 2 Tbsp. shredded cheese
  • 2 Tbsp. prepared marinara sauce
  • 1 Whole-wheat English muffin, split and toasted
  • Optional additional toppings: basil leaves, pepperoni slices, bacon bits

Preheat oven or toaster oven.

Coat skillet with cooking spray and heat over medium-high. While stirring often, add egg and cook until it sets into soft curds for 1-2 minutes. 

Spread marinara sauce on English muffin halves and top with scrambled egg. Add cheese on top and other additional toppings if desired. Broil until cheese is melted for 1-3 minutes.
