Breakfast Quinoa

Quinoa is a grain that is wheat free and gluten free, but is big on taste! The ratio is 2 cups water to 1 cup quinoa (pronounced keen-wah). It has a nutty flavor and when paired with apples is a very filling. An alternative to oatmeal, and good for someone who is allergic to wheat. Get it at the health food section of grocery store.

Ingredients

  • 2 C. quinoa
  • 1 C. water
  • 1 C. thinly sliced apples
  • 1/2 tsp. cinnamon
  • 1/2 C. brown sugar
  • Cream or milk for topping (optional)
  • Raisins (optional)

Directions

Add all ingredients to heavy pot with lid. Bring to boil. Reduce heat and cover pot. Simmer for about 15 minutes. It is done when seeds are transparant and no longer white and all water is absorbed. Serve warm with cream or cold.
