Breakfast Sausage and Apple Casserole

- 5 Golden Delicious Apples, peeled, cored and wedged
- 2 lb. Pre-Cooked Sweet Italian Sausages, halved
- 1 1/2 C. Part-Skim Ricotta Cheese
- 1 1/2 C. Pumpkin Puree
- 1 1/2 C. Skim Milk
Preheat oven to 350 degrees. Arrange the apple wedges and sausage halves on the bottom of a greased 9x13" baking dish. In a food processor or blender, combine the ricotta cheese, pumpkin puree, and skim milk, and puree until smooth. Pour the pumpkin sauce evenly over the apples and sausage. Bake for 30 minutes until casserole is warmed through and bubbly.
