Breakfast Scramble
Ingredients
- 4-5 medium sized potatoes, cooked and cut in bite-size pieces
- 1 lb. roll ground breakfast sausage
- diced onion (as much as desired)
- 6 eggs
- shredded cheddar cheese
Directions
Brown and crumble sausage in skillet (works great in electric skillet). Drain all but about a Tbs. of the grease. Add diced onion and potatoes and mix together. Let cook on medium-low until onion is tender and potatoes are heated through. Break eggs on top and salt and pepper to taste. Mix all together, stirring mixture gently while cooking until eggs are cooked through. Top with shredded cheese and cover. Turn off heat and leave covered until cheese is melted.
