Ingredients

  • Pasta:
  • 1 Breast Chicken (cooked, chopped)
  • 1 1/2 C. orzo pasta (cooked)
  • 1 tomato (chopped)
  • 1 cucumber (chopped)
  • 1 C. feta cheese
  • Dressing:
  • 1/4 C. fresh parsley
  • 1tsp lemon juice
  • 1/2 tsp dried oregano
  • 1/2 tsp lemon pepper

Directions

In large bowl combine rice, tomato, cucumber, feta, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator.
Just before serving, drizzle a little olive oil over salad.
