  • 1 cup whole grain rice
  • 1 large zucchini
  • 1 green chili
  • 2 cloves whole garlic
  • 1/4 cup green peas
  • 1/2 cup broad beans
  • 50 grams mint leaves

Cook the rice in a saucepan, along with green chili, salt, a tablespoon of olive oil and 2 cups of water. Have the rice boiling. Once boiled, cover the saucepan. When the water is absorbed, let cool for 15 minutes. Fluff the rice with a fork and set aside. Steam the peas and set aside. Roast the zucchini along with the garlic. Once cooked, turn off heat. In a large bowl, add the rice, broad bean, zucchini, peas and mint. Drizzle on some olive oil.
