  • 3 cups penne pasta
  • 4 cups broccoli florets
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded

Preheat the oven to 350F. Cook the pasta according to the packaging for al dente and add the broccoli into the boiling water for the last 2 minutes, drain and set aside. Melt the butter in a saucepan and stir in the flour. Cook for 2 minutes, or until bubbly. Mix in the milk, bring to a boil and stir. Simmer on low for 3-5 minutes, or until thickened. Add the cheese, reserving some for topping, and cook for 3 minutes, or until melted. Lightly grease a baking pan, add the noodles and mix in the cheese mixture and cherry tomatoes. Bake for 20 minutes or until heated through and serve.
