  • 1/4 C. butter
  • 1 large onion, chopped
  • 1/4 C. flour
  • 1 can evaporated milk
  • 1 carton chicken broth
  • 1 bag frozen baby broccoli florets, thawed
  • 1/4 tsp. ground pepper
  • 1/2 tsp. salt
  • 1 block Velveeta cheese, cubed
  • 1 1/2 C. shredded Cheddar cheese
  • 1 C. shredded Parmesan cheese

Melt the butter in a skillet over medium-high. Cook the onion 4 minutes while stirring. Add the flour and cook another minute. Slowly add the milk until smooth. Pour the mixture into a slow cooker. Add the broth, broccoli, pepper, and salt. Cover and cook on low 4 hours. Add the cheese cubes and stir until melted. Put in the cheddar and Parmesan and mix until melted. Sprinkle on extra Parmesan before serving.
