Broccoli Cornbread Recipe
Ingredients
- 2 sticks margarine or butter
- 2 pkg. JIFFY cornbread mix
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed but not drained
- 1 onion chopped
- 1 carton (10 or 12 oz. your preference) cottage cheese
- 4 eggs
- 1/2 C. shredded cheddar cheese (I use 1 C.)
Directions
Melt butter in a 9 X 13 pan. Mix together all other ingredients EXCEPT cheddar cheese. (do not drain broccoli) Pour batter over butter. Sprinkle with cheddar cheese (I wait until brown then sprinkle so inside of cornbread will be done). Bake at 375 degrees for 30 minutes or until brown.
