  • 1 medium head of broccoli, chopped small
  • 1/2 tsp garlic salt
  • ¼ tsp cracked black pepper
  • Softened Butter
  • 2 tbsp extra-virgin olive oil
  • 8 slices bread
  • 1 cup provolone or white-cheddar cheese, shredded or thinly sliced

Preheat your oven to 350 F.

First, we’re gonna season your broccoli. Spread broccoli florets out on a rimmed baking tray, then drizzle them with olive oil. Then, sprinkle your garlic salt and pepper evenly over the tray.

Next, we need to get roasting. Roast for 8 to 10 minutes, or until your broccoli is your desired crispiness. Remove tray from the oven and allow it to cool.

Let’s do some sandwich prep! Layer the cheese on one slice of bread. Then add your chopped broccoli florets in the middle, and finally place one more slice of cheese on top so the broccoli is tucked inside a pocket of cheesy goodness. This will prevent little broccoli bites from falling out as the mixture melts. Top each with another slice of bread.

Finally, we need to get grilling. Heat butter in a skillet over medium heat. Place prepared sandwich into the skillet, turning until the bread is evenly toasted and the cheese is deliciously gooey.
