  • 6 oz. spiral noodles
  • 2 tsp. oil
  • 4 cloves garlic, sliced thin
  • 12 oz. fresh broccoli florets, chopped
  • 1 Tbsp. butter
  • 3 Tbsp. flour
  • 1 3/4 C. chicken broth
  • 1 C. milk
  • 2 tomatoes, chopped
  • 4 oz. shredded sharp cheddar
  • 3 Tbsp. shredded parmesan cheese

Preheat the oven to 375 degrees. Cook the noodles in water until al dente and set aside. Heat the oil in a skillet and cook the garlic about 1 minute. Add the broccoli and salt and cook 3 minutes on medium. Heat the butter in a large pot and add the flour. Season with salt and cook about a minute. Whisk in the chicken broth for 30 seconds and add the milk. Bring to a boil, then simmer about 5 minutes. Remove from heat and add the cheddar. Mix until the cheese melts. Add the noodles and broccoli to the sauce and mix well. Pour into a casserole dish and top with Parmesan. Bake 20 minutes until bubbling and serve.
