Broccoli Pasta Salad
Serving Size / Yield
- 1 16 oz. box cavatappi (or your favorite pasta)
- 2 Tbs. olive oil
- 2 8 oz. bags frozen broccoli
- 2 carrots, sliced
- 3 Roma tomatoes, quartered and seeded
- basil, to taste
- salt and pepper, to taste
Boil the pasta according to package directions. Boil the carrots and broccoli together until tender but still with a bite. Drain. Saute the broccoli and carrots to finish cooking and add the tomatoes.
Drain pasta, and add the oil and spices. Refrigerate until chilled or serve warm.
