  • 1 lb. broccoli floret
  • 3 large tomatoes, divided
  • 3/4 lb. onion, diced
  • 2 garlic cloves, minced
  • 3/4 C. basil leaves, chopped
  • 1/2 lb. mozzarella cheese, divided
  • 3 large eggs
  • 1 C. cottage cheese
  • 1 lemon, juiced
  • 3/4 C. grated parmesan cheese, divided
  • 2 tsp. salt
  • 1 tsp. black pepper

Preheat the oven to 375 degrees. Steam the broccoli until tender and drain. Chop the tomatoes and add them to the broccoli. Stir in the onion and garlic and ½ cup of basil. Add 2/3 of the mozzarella into the mixture and stir. Whisk the eggs, cottage cheese, and lemon juice together in a bowl. Add ½ cup of Parmesan. Add this liquid to the broccoli mixture and season with salt and pepper. Put the pasta into a casserole dish. Arrange the rest of the tomatoes on top of the casserole. Scatter on the remaining mozzarella and Parmesan on top. Bake 35 minutes until the cheese has melted.
