This simple soup is created in the crockpot with plenty of sharp white cheddar cheese! Use freezer safe containers to freeze portions of this delicious soup.

  • 3 Tbsp. Olive Oil
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 3 Tbsp. flour
  • 1 C. vegetable stock
  • ¾ C. milk
  • 1 C. broccoli florets
  • 2 C. sharp white cheddar cheese, shredded

Heat the olive oil in a saucepan and cook the garlic with salt and pepper for about 3 minutes. Add flour to the pan and stir for 1 minute. Add the stock slowly while stirring, then pour in the milk. Finally, add the broccoli and pour the mixture into a crockpot. Cook on low for 6 hours until cooked through. Blend the soup until the broccoli is sliced into small pieces. Return to the crockpot and add the cheese while stirring. Cook another 15 minutes until the cheese is incorporated.
