Broiled Chicken Salad Sandwiches

Heat up this chicken salad sandwich for warm lunch.

Ingredients

  • 1/4 C. celery thinly sliced
  • 1/4 C. green onions sliced, including some green
  • 1 Tbs. butter or margarine
  • 1 1/2 C. chicken chopped cooked
  • 1/4 C. mayonnaise
  • 1/4 tsp. onion salt
  • 4 slices wheat bread whole, toasted
  • 4 slices Monterey jack cheese

Directions

In a medium skillet over medium heat, sauté celery and green onions in butter or margarine until crisp-tender. Remove from heat. Stir in chicken, mayonnaise and onion salt. Spread 1/4 of the chicken mixture on each slice of bread. Broil 4" from heat source for 2-3 minutes. Top each with a slice of cheese. Broil 1 minute longer or until cheese melts.

Yield: 4 servings
