Broiled Eggplant

Ingredients
- 2 sm. eggplants, cut into halves
- 4 Tbs. olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 garlic clove, sliced
Directions
Make criss-cross cuts on inside part of eggplant halves. Brush with oil, salt, pepper and garlic. Place eggplant cut side up, in broiler and broil for 30 minutes. Brush with oil.
