  • ½ head green cabbage, cored and shredded
  • 6 C. chicken broth
  • ¼ C. red wine vinegar
  • Salt and pepper to taste

In a large saucepan, cook bacon until crisp; use a slotted spoon to transfer to a plate lined with paper towels. Add onion into bacon grease and sauté until translucent. Add potatoes and cabbage; cook for 7 to 10 minutes, stirring constantly, as potatoes soften. Drizzle in vinegar and season with salt and pepper. Pour in broth, bring to a boil, reduce heat, and simmer for 20 to 25 minutes until everything is tender. Add bacon back into soup.
