Brown Rice Pilaf

This healthy side dish will please any palate!

  • 1 C. brown rice medley
  • 1 tsp. olive oil
  • 1/2 C. chopped onion
  • 2 C. chicken broth
  • one 1-oz. package dried wild mushrooms, soaked in 1/2 C. hot water and chopped
  • 1 Tbs. parsley, chopped

Heat olive oil in a pot over medium-high heat.  Add onions and cook for 5 minutes.  Stir in rice and toast for a couple of minutes, stirring frequently.  Pour in chicken broth and mushrooms with water, and boil.  Reduce heat to a simmer, then cover and cook for 35 minutes.  Remove from heat, stir in parsley, cover, and let stand for 10 minutes.  Fluff with fork and serve.
