  • 1 C. butter, softened
  • 1 C. white sugar
  • 1 C. brown sugar
  • 2 cage-free eggs
  • 1 tsp. vanilla extract
  • 2 C. flour
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1 ½ tsp. ground cinnamon
  • 3 C. quick cooking oats

Preheat oven to 375 degrees F and coat two baking sheets with cooking spray.

Combine butter, white sugar and brown sugar in a medium mixing bowl. Beat in eggs, one at a time. Add in vanilla extract and stir well. In a separate bowl, mix flour, baking soda, salt and cinnamon. Gradually stir flour mixture into butter mixture. Add oats and stir to combine.

Form dough into small walnut-sized balls. Transfer balls to baking sheet, 2-inches apart. Using a fork, flatten the surface of each cookie. Bake for 10 minutes or until cookies are golden brown. Allow cookies to cool before serving.
