  • 5 pounds sweet potatoes
  • ¾ cup brown sugar
  • 1 melted stick of butter
  • ¼ cup lemon juice
  • 1 ½ cup walnuts
  • 2 tablespoons cornstarch
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cumin
  • Salt and pepper

In a small bowl, mix the brown sugar, melted butter, cinnamon, cumin, and ½ teaspoon salt. Peel and slice the potatoes into 1-inch rounds. Coat the sweet potatoes in the cornstarch in a large bowl and then place half of the potatoes in the crockpot. Cover the potatoes in the butter mixture and add the remaining potato rounds. Cover the pot and cook on low for 4 hours. Preheat the oven to 350 degrees and spread the nuts on a baking sheet. Bake for 12 minutes and then chop. Pour the lemon juice over the potatoes and transfer to a serving dish. Toss the potatoes with the chopped walnuts and serve.
