  • 2 eggs, beaten
  • 1 1/2 C. Bisquick Reduced Fat Baking mix
  • 1 1/2 C. diced lean ham
  • 1 1/2 C. shredded reduced fat Cheddar cheese
  • 1/2 C. chopped onion
  • 1/2 C. chopped green bell pepper
  • 1/3 C. fat free milk
  • 2 Tbs. vegetable oil

Preheat oven to 375 degrees. Spray a 9x9-inch Cake pan with butter flavored cooking spray. In a large bowl combine the eggs, baking mix, ham, 3/4 C. cheddar cheese, onion, green pepper milk an d vegetable oil. Mix well to combine. Spread mixture evenly into prepared pan. Bake 20 minutes.

Evenly sprinkle the remaining 3/4 C. cheddar cheese over the tops of the partially baked casserole. Continue to bake for 10 minutes. Place pan on a wire rack and let set for 5 minutes before serving.

Yield: 8 servings
