Brunch in a Shell

This is a great recipe if you're having the ladies over for brunch.

Ingredients

  • 1 slice ham, cut l/4-inch thick
  • 1 unbaked 9-inch pie shell
  • 1/2 (10 1/2-oz.) can cream of mushroom soup
  • 2/3 C. dairy sour cream
  • 3 eggs
  • 1-2 Tbs. chives, chopped
  • 1/4 tsp. salt
  • dash pepper

Directions

Cut ham slice so it will cover bottom of pie shell evenly. Combine remaining ingredients with rotary beater and put into ham-lined pie shell. Cover crust edge with 1 1/2 inches aluminum foil. Bake in preheated 425 degree oven for 40-45 minutes, removing protective foil from crust 15 minutes before end of baking time. Pie puffs up near end of baking and sinks back after removal from oven.
