Ingredients
- 1.25 pounds chicken cutlets
- 3 tomatoes
- 2 minced garlic cloves
- ¼ cup chopped red onion
- 1 tablespoon balsamic vinegar
- 2 ½ tablespoon chopped basil
- 1 tablespoon olive oil
- Salt and Pepper to taste
- Parmesan cheese

Begin by mixing the chopped onion, balsamic vinegar, olive oil, and a dash of salt and pepper. In a separate bowl, add the chopped tomatoes, garlic, and basil. Add the onion bowl to the tomato bowl and add 1/8 teaspoon salt and pepper. Set the bruschetta aside for a minimum of 10 minutes. Next, cut the chicken into slices and season with salt and pepper. Oil the grill grates and grill the chicken for 2 minutes per side over medium-high heat. Serve the bruschetta on the chicken and sprinkle with cheese.
