Brussel Sprouts with Apples and Bacon
Ingredients
- 2 lb. Brussels sprouts, trimmed, cut in half lengthwise
- 4 oz. bacon, cut into 1/4-inch dice
- 1 medium onion, diced
- 1 apple, peeled, cored, and cut into 1/4-inch dice
- 2 sprigs fresh thyme, leaves picked and chopped
- 1 Tbs. fresh parsley, chopped
- Coarse salt and freshly ground pepper
Directions
Bring a large pot of water to a boil, add salt. Add Brussels sprouts and cook until bright green and tender, about 5 minutes, drain and set aside. Using a large sauté pan over medium high heat, cook bacon until crisp. Reduce heat to medium, add onions and sauté until translucent, about 5 minutes. Add apples and thyme and cook, stirring occasionally, until apples are golden brown, about 3 minutes. Transfer Brussels sprouts to pan, heat through and season with salt and pepper.
