  • 1 egg
  • 1/2 C. all-purpose flour
  • 2/3 C. beer
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. cayenne pepper
  • 1/4 C. all-purpose flour
  • 2 C. flaked coconut
  • 24 shrimp
  • 3 C. oil
  • For the cajun marmalade:
  • 1/4 C. orange marmalade
  • 1/2 tsp. cajun seasoning, or to taste

Begin by combining the egg, flour, beer, and baking powder in a bowl. Place flour and coconut in two separate bowls. Then hold shrimp by tail and place in flour, then dip it in egg batter. Finally roll shrimp in coconut, and place it on a greased baking sheet. Refrigerate for about 15 minutes. Meanwhile, heat oil to 350 degrees F in a deep-fryer. In batches fry shrimp for about 2 minutes. Set aside to cool and make dipping sauce by mixing the marmalade ingredients together drizzle shrimp with it when maramale turns smooth.
