Ingredients

  • 1 (5 oz.) can Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna with Chipotle and Olive Oil, undrained
  • 1/2 C. red quinoa
  • 1/4 C. cherry tomatoes
  • 8 asparagus, chopped to 1 inch pieces
  • 2 mini sweet peppers, sliced in rings
  • 1/2 red onion, julienned
  • 1/2 green zucchini, chopped
  • 1/2 C. eggplant, diced
  • 1 tsp. fresh oregano, lightly chopped
  • 2 radishes, sliced
  • 2 tsp. sherry vinegar
  • 2 1/2 tsp. extra-virgin olive oil
  • 1/16 tsp. salt
  • 1/16 tsp. pepper
  • 2 tsp. fresh basil, thinly sliced, as garnish (optional)
  • 2 tsp. fresh green onions, thinly sliced, as garnish (optional)
  • 2 tsp. fresh mint, thinly sliced, as garnish (optional)

Directions

Heat the oven to 400 F and line a baking sheet with aluminum foil to avoid extra clean up. Cook quinoa according to package instructions. When finished, set aside and allow to cool until warm. Chop asparagus stalks into 1" pieces. Combine tomatoes, asparagus, sweet peppers, red onion, green zucchini, eggplant, oregano and radishes in a mixing bowl with 2 teaspoons sherry vinegar and 2 1/2 teaspoons extra virgin olive oil. Season with salt and pepper and pour onto the foil-lined baking sheet. Roast the vegetable mixture in pre-heated oven for 15 minutes, then set oven to broil for 5 minutes or until vegetable mixture is golden browned. Remove from oven and season with salt and pepper to taste. Combine the vegetable mixture, quinoa and tuna in a mixing bowl. Add half of the garnishes (basil, green onion and mint), as desired. Drizzle mixture with 2 tablespoons sherry vinegar and 2 tablespoons extra virgin olive oil. Season with salt and pepper to taste. Place on a serving dish and finish with remaining garnishes, as desired. Serve warm or at room temperature.
