Busy Night Chicken Lo Mein
Ingredients
- 8 oz. boneless, skinless chicken breasts, cut into 1 inch pieces
- 2 Tbs. margarine or butter
- 1 (16 oz) pkg. Oriental style mixed veggies
- 1 (4.8 oz.) pkg. Pasta Roni Angel hair pasta with herbs
- 3 Tbs. Teriyaki sauce
Directions
In large skillet over medium-high heat, sauté chicken with margarine for 5 minutes or until chicken is no longer pink Stir in 2 C. water and vegetables, bring to a boil Stir in pasta and special seasonings (from pasta box); return to a boil. Reduce heat to medium. Gently boil uncovered 4-5 minutes or until pasta is tender, stirring frequently. Stir in teriyaki sauce. Let stand 3 minutes before serving.
Yield: 4 Servings.

Neither margarine nor butter is used in traditional Chinese nor Japanese cooking. Use peanut oil instead.
Substitute angel hair pasta with egg noodles or buckwheat (somen, this is Japanese) noodles
