A butterscotch pudding pie with fat free cream cheese and crunchy pecans.

  • 1 (6 oz.) prepared graham cracker pie crust
  • 1 (4 serving) pkg. sugar-free instant butterscotch pudding mix
  • 2/3 C. nonfat dry milk powder
  • 1-1/4 C. water
  • 3/4 oz. (3 Tbs.) chopped pecans
  • 1 pkg. (8 oz) fat-free cream cheese
  • 2 Tbs. sugar substitute
  • 3/4 C. light whipped topping
  • 1 tsp. vanilla extract

In a medium bowl, combine dry pudding mix and dry milk powder. Add water. Mix well using a wire whisk. Stir in 2 Tbs. chopped pecans. Pour into pie crust. In a medium bowl, stir cream cheese with a spoon until soft. Add sugar substitute, prepared whipped topping and vanilla extract. Mix gently to combine. Spread evenly over butterscotch layer. Sprinkle remaining 1 Tbs. chopped pecans evenly over top
