  • 1 C. flour
  • 1 C. yellow cornmeal
  • ⅓ C. brown sugar
  • ⅔ C. buttermilk
  • 2 eggs
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 C. fresh blueberries
  • 3 Tbs. vegetable oil, for the pan

Preheat the oven to 450 degrees. Combine the flour, cornmeal, baking powder, and salt. Add in the brown sugar, buttermilk, and eggs. Fold in the blueberries. Grease a cast-iron skillet with the oil and pour in the batter. Bake the bread for 20 minutes until it’s golden brown.
