  • 2 large eggs
  • 1 3/4 C. buttermilk
  • 1/2 C. butter, melted and cooled to room temperature
  • 2 tsp. vanilla extract
  • 2 C. pastry flour
  • 2 T sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • chocolate or strawberry syrup

In a mixing bowl, beat together the eggs, buttermilk, melted butter, and vanilla.
In a separate bowl, whisk together the dry ingredients.
Slowly pour the buttermilk mixture into the dry ingredients, stirring until nearly smooth.
Spray your waffle iron with a non-stick cooking spray before preheating it.
For an 8-inch round waffle iron, use about 1/3 C. batter.
Cook for 2 to 3 minutes or until the iron stops steaming.
