Using butterscotch pudding mix is a clever trick for tasty muffins.

  • 6 Tbs. butter or margarine
  • 1/4 C. brown sugar, packed
  • 1 large egg
  • 1 1/4 C. milk
  • 2 C. flour
  • 1 package (4 serving size) instant butterscotch pudding powder
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 2/3 C. butterscotch chips

Cream butter and brown sugar together in large bowl until light and fluffy. Beat in egg. Add milk. Mix. Combine remaining 5 ingredients in medium bowl. Make a well in center. Add butter mixture to well. Stir just until moistened. Fill greased muffin C. 3/4 full. Bake at 400 F for about 18 minutes until wooden pick inserted in center of muffin comes out clean. Let stand in pan for 5 minutes before turning out onto wire rack to cool.

Makes 12 muffins.
