Butterscotch Sweet Potato Casserole

By adding the rich flavor of butterscotch to your sweet potato casserole you will be for a delicious and even better tasting casserole.

Ingredients

  • 3 sweet potatoes
  • 1-1/2 C. sugar
  • 3 large eggs
  • 1/2 stick (1/4 C.) butter
  • 1/2 C. milk
  • 1 (3 oz.) box instant butterscotch pudding

Directions

Boil, drain and mash sweet potatoes. In a large bowl, mix all ingredients well. Place in buttered casserole dish. Bake at 325 degrees until nearly firm in center.


NOTE: You can also bake this in an unbaked 9-inch pie shell.
