  • 8 russet potatoes; peeled and sliced into circles
  • 3 Tbs olive oil
  • 2 sticks salted butter
  • 1 C grated jack cheese
  • 1 C milk
  • 2 tsp salt
  • 1 C sour cream
  • Pepper
  • Chopped parsley

Preheat the oven to 400 F.

Line a baking tray with some tin foil. Throw in the sliced potatoes and toss them around with some olive oil.

Then stick them in the oven for about 30- 40 minutes until they are partially tender. When they are done, remove and set aside.

Meanwhile, slice up the sticks of butter and put them in a bowl. Add the sour cream and mix the ingredients. Then add in the milk and whisk everything together.

Grease a casserole dish and carefully arrange the sliced potatoes, filling up the dish. Then pour the butter mixture over the potatoes and top it off with the grated cheese.

Stick it in the oven for about 30 minutes until the potatoes completely tenderize and the cheese has melted. Remove, sprinkle on some chopped parsley and serve warm.
