Need something to eat on the go? Then make this country-inspired ham, egg and cheese biscuit sandwich. You won't get enough of these homemade biscuits, they're buttery and easy to make.

  • 2 1/4 C. flour
  • 1 T. baking powder
  • 1 tsp. sea salt
  • 1/3 C. unsalted butter
  • 1 C. milk
  • flour for counter
  • 4-8 eggs, beaten
  • 8 slices of cheese
  • 1 pkg Canadian bacon
  • cooking spray
  • 2 T. melted butter

Preheat your oven to 425ºF.

Coat baking pan or sheet with cooking spray. In a bowl combine dry ingredients and set aside. Cut butter into small pieces and combine until mixture looks like crumbles. Add half a cup of milk to dry ingredients, and mix, then add the remaining milk and mix well.

Place dough onto a floured surface and kneed carefully 15-20 times. Pat dough flat and cut out biscuits. Then place biscuits on baking pan. Brush them with melted butter. Then bake for 13-15 minutes or until dough is browned.

Scramble eggs as desired then set aside. To assemble sandwich, cut biscuits in half, place a slice of cheese, then top with the Canadian bacon and eggs.

Serve warm.
