  • 3 lb. russet potatoes, peeled and cubed
  • 1 C. hazelnuts, chopped
  • 1 stick butter
  • 1 C. milk
  • 1 (7 oz.) container Greek yogurt
  • Salt and pepper to taste

In a large pot, add potatoes and cover with water; bring to a boil, reduce heat, and simmer for 15 to 20 minutes until tender. Drain and return potatoes to pot. In a large skillet, toast hazelnuts over medium heat until fragrant. Add in butter, melt, and stir with hazelnuts until they are darker in color. Use a fork to mash potatoes with milk, yogurt, salt, and pepper. Stir in hazelnut mixture until well combined and serve.
