  • 1 box Fettuccine pasta
  • ¾lb seafood mix, raw and thawed
  • olive oil
  • salt
  • pepper
  • 4 oil-packed anchovies
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16oz canned diced tomatoes
  • 2 tablespoons sour cream
  • 4 tablespoons parsley, chopped

Preheat the oven to 425F. Line a cookie sheet with foil and arrange the seafood on the sheet. Drizzle lightly with oil and season with salt and pepper. Bake for 12 minutes. Cook the pasta according to the box for al dente, drain and set aside. Pour 2 teaspoons oil into a skillet. Add the anchovies, breaking them down with a spoon for 1 minute. Add the onion and sauté for 5 minutes. Add garlic and tomatoes. Season with salt and pepper to taste. Bring to a simmer and cook for 10 minutes. Add the pasta and parsley. Mix well and toss in the seafood until well mixed.
