Cabbage Casserole with Rice and Bacon

This is a quick and easy dinner, thanks to the crockpot!

  • 1/2 med. head cabbage
  • 1/2 med. onion, chopped
  • 1/2 C. white rice (long or short grain)
  • 5 slices Canadian bacon, minced
  • 1 C. chicken broth
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

In a crockpot, layer 1/3 of the cabbage, 1/2 of the rice, and 1/2 of the bacon.
Repeat layers, ending with a layer of cabbage. Add the stock, salt and pepper. Cover and cook on low for 6-8 hours. If there's any liquid in the pot after cooking, drain it off.
