Cabbage Gratin
Ingredients
- Vegetable cooking spray
- 4 C. cabbage coarsely chopped
- 1 C. carrot coarsely shredded
- 1/2 C. sliced green onions
- 1 C. skim milk
- 1/4 C. Gruyere cheese
- 1/2 tsp. caraway seeds
- 1/4 tsp. salt
- 2 eggs lightly beaten
- 1 egg white
- 2 Tbs. minced fresh parsley
- 1 Tbs. grated Parmesan cheese
Directions
Coat a small saucepan with cooking spray; place over medium heat until hot. Add cabbage, carrot, and green onions; sauté 7 minutes or until tender. Spoon cabbage mixture into a 10x6-inch baking dish coated with cooking spray. Combine milk and next 5 ingredients (milk through egg white) in a medium bowl; stir well. Pour over cabbage mixture. Combine parsley and Parmesan cheese; sprinkle over cabbage mixture. Bake at 375 degrees for 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
