Cabbage Roll Casserole
Ingredients
- 1 lb. ground meat
- 1 large onion, chopped
- 2 cloves garlic,minced
- 1/2 bell pepper, chopped
- 1 10 oz. can diced Ro-Tel tomatoes
- 1 C. V-8 juice (more if necessary - can substitute water or broth)
- 1/2 C. raw rice
- Season to taste
- 1 head cabbage shredded
- Grated cheddar cheese
Directions
Preheat oven to 350 degrees. Brown meat and add onion, bell pepper, and garlic. Cook until vegetables are wilted. Drain. Season to taste. Add Ro-tel, juice and rice. Mix together well. Put shredded cabbage in bottom of 9x13x2 inch baking pan. Pour meat mixture on top. Cover tightly with foil and bake for about 1 hour. After baking, top with cheese and heat until melted.
