Cabbage Roll Casserole

For those who love the taste of cabbage rolls with the ease of a casserole. The Ro-tel tomatoes give it a little spice kick.

Ingredients

  • 1 lb. ground meat
  • 1 large onion, chopped
  • 2 cloves garlic,minced
  • 1/2 bell pepper, chopped
  • 1 10 oz. can diced Ro-Tel tomatoes
  • 1 C. V-8 juice (more if necessary - can substitute water or broth)
  • 1/2 C. raw rice
  • Season to taste
  • 1 head cabbage shredded
  • Grated cheddar cheese

Directions

Preheat oven to 350 degrees. Brown meat and add onion, bell pepper, and garlic. Cook until vegetables are wilted. Drain. Season to taste. Add Ro-tel, juice and rice. Mix together well. Put shredded cabbage in bottom of 9x13x2 inch baking pan. Pour meat mixture on top. Cover tightly with foil and bake for about 1 hour. After baking, top with cheese and heat until melted.
