Cabbage Roll Soup
Ingredients
- 1 lb. ground round
- 3-1/2 C. water
- 2 C. green cabbage, coarsely chopped
- 1 C. carrot, sliced
- 1/2 C. celery, sliced
- 1/2 C. onion, chopped
- 1/2 tsp. dried dill
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. pepper
- 3 (10-1/2 oz.) cans beef consommé, undiluted
- 2 (14-1/2 oz.) cans diced tomatoes, undrained
- 1/2 C. converted rice, uncooked
Directions
In a large nonstick skillet, brown the meat over medium-high heat; remove from heat and drain well. Place the meat in a 4-quart crock pot; stir in the water and the next 10 ingredients. Cover; cook on low for 8 hours. Increase the heat to high; stir in the rice. Cover and cook for an additional 30 minutes or until the rice is tender. Serves: 10
