  • 4 chicken thighs, bone-in and skinless
  • Salt and pepper to season
  • Canola oil spray
  • 14 oz. can crushed tomatoes
  • ½ cup of onions, diced
  • ¼ cup of red bell pepper, diced
  • ½ cup of green bell pepper, ducked
  • ½ teaspoon of dried oregano
  • 1 bay leaf
  • 2 tablespoons of basil, chopped

In a large mixing bowl, season the chicken thighs with salt and pepper. Lightly spray the instant pot with canola oil. Press “sauté” and brown the chicken thighs on both sides for 4 minutes. Once the chicken is browned, set it aside and spray a little more canola oil to cook the onions and pepper. Cook the onions and peppers for 5 minutes or until they are softened and golden.
Then, slowly add the crushed tomatoes over the chicken and vegetables. Add oregano, bay leaf, salt and pepper. Give it a good stir and cover the chicken. Cook on high pressure for 25 minutes.
Once the chicken is fully cooked, remove the bay leaf and garnish the chicken with chopped basil.
